Is extra stamina necessary for fighting Windblight Ganon?

I have three extra bars of stamina and ten heart containers, so I'm considering trading my stamina so I can get the master sword. I have two questions: can I fight Windblight Ganon at starter level stamina, and once I trade by hearts for stamina, I can trade them back, right?
