What do you eat with curry or stews instead of rice/bread?
For example, I love Japanese curry but to enjoy the sauce I would have to eat it with rice. What can I substitute the rice with to keep my diet low in carbs?

I love it over shredded broccoli slaw. Gives a great crunch and cool to the spice.
I use cauliflower or broccoli rice if I eat rice with a sauce. If it's without sauce, I use rice but take as minimal as possible and add a lot of veg :)
you could also consider watering down the sauce and throwing in more chunky bits (potatoes, meat, carrots, etc) and eating it as is. i do that sometimes ^^
Either shirataki noodles or some kind of mash, maybe made with cauliflower

I make Japanese curry with cauliflower rice, as others have suggested! It’s perfect: white and fluffy and it mixes very well with curry.
Cauliflower rice as other people said. I’d also add some veggies to bulk it up after it’s done cooking.
Example: I have a tikka masala recipe I love, I serve it with a side of cauliflower rice and chop up some cilantro, grape tomatoes, and jalapeños into the dish when it’s ready to eat.
I've started eating a lot of sauces without a carb. It's not barbaric. Use a spoon or sip from the bowl if you're home
I tend to eat those dishes over vegetables like beans, broccoli and zucchini.
Cauliflower rice!
