Is there any way to prevent items from flying past hoppers in a water based item sorting system?

Is there any way to prevent items from flying past the hoppers in a water based item sorting system? I built a water based item sorter loosely based off of Mumbo jumbos hermitcraft design, however a few of the items go past the hopper they were meant to go in. Any immediate thoughts?

Build an automatic dropper that’s very slow.

You can also make the water stream flow in a loop. Items that aren't picked up should be grabbed on the second pass. Assuming that your item source doesn't have an average rate for any one item that exceeds a hopper rate.

Slow down your input channel.

Why is water better than hopper chain?

Less resource intensive. Imagine the cost of 8 hoppers compared to 1 bucket with water.
