This will be my first GF Thanksgiving--tips for dealing with a somewhat closed-minded family?

Do you have a method of dealing with holidays like Thanksgiving? I know I can just bring GF substitutes if I need to. I never got the biopsy, just went GF and had 99% of my symptoms resolve, so a lot of family still thinks I'm "making it up." Still have to explain to them about every time why I can't eat this or that.

What are your favorite GF Thanksgivingy food substitutes? Are there any things I should look out for, that have hidden gluten in them? I'm thinking canned cranberry sauce or other canned foods, glazes on turkeys, etc.

Edit: Wow, thanks everyone! These responses are great, and I love the recipes and other resources! Good luck to everyone for Thanksgiving, too! :)
