Are you supposed to tip 18-20% at an already expensive bar?

I'm planning a trip to NY, and I really want to check out this bar called Milk & Honey. Just read that all their drinks are custom-made at $16 each. I've never ordered drinks without food before, so not sure what's the standard at fancy bars.
