Good career mode challenges/signing caps?

Got bored of picking a decent midtable team as after the first season you can pretty much sign anyone on a pre-contract - taken to picking teams with low 70 rated players who all have high potentials (e.g Stuttgart), or picking a team in an obscure league with lots of money (e.g China - Bejing Guoan / Saudi Arabia - Al Hilal), selling all the foreign players, and building a new side where the only players I can sign are ones are ones of the same nationality as the club or surrounding areas (Gulf & North African Countries for Al Hilal, China, Japan,Thailand, Koreas Beijing). Any other teams people would recommend for this kind of thing? Get bored after about half a season otherwise. Cheers
