What is the Point of The 7 Major Scales

This is a question I've had for a long time, what is the purpose of using one scale over another? I am genuinely asking. If all the intervals are the same don't they all sound the same, on their own not compared to another scale. Do certain scales have some emotions or something. I just am curious.
