Need Help Moving Email from GSuite Legacy

Bit of a convoluted post, but what I'm essentially trying to do is move my personal domain email away from GSuite Legacy, but I still want to keep the actual Google accounts (since I've got a fair number of purchases on the accounts and have unfortunately used Single Sign-In on a few apps and websites). The domain is hosted on Namecheap, so no problems there I think!

From what I understand, I can just 'switch-off' email for all users under the admin dashboard, which hopefully leaves all the users logged into Google accounts (with Drive, etc. still active).

Have I basically got the gist of it or am I totally off the mark in regard to what needs to be done? Any and all help will be very appreciated :)
