Need tips on rolling texture

I am doing a job in a mobile home...rip out panelling replace with sheet rock... I super screwed myself bidding this job and so trying to finish with quality but fast...

I don't have.e hopper so am going to roll texture all the walls...I have never roll textured that much before ...and tips to help me get this job done quickly?

How thick do you need to roll on the mud when you texture? Do you use two rollers? Do you mix the mud to about the same as you would to tape? More or less water?
