Can i just put them on top of soil for them to grow more roots or should i put them in a dish of water first?

Should i cut the long branchy parts shorter?

Looks to be Hens and Chicks. Yes, on top of soil with some covering what roots they have, then water. Yes, you may trim the branchy parts.

The smaller is a begonia, an annual. I would plant it in ground and keep it watered/sheltered until it roots nicely.

The other one could be aeonium. They grow on stems like those. Dont know about how to root them.
