What causes NEIPAs to go ‘off’? Can we avoid it?

Have read about NEIPAs going somewhat passed their best after a few weeks. Is this due to the large amounts of dry hopping?

If we didn’t dry hop much or at all, but kept the high levels of hop additions late in the boil, would we get all the juicy flavours of the NEIPA, without the aroma – but the shelf life would last longer?
