Accessories for a beginner?

Hi all! My question is more around what accessories/classes whatnot to purchase. My girlfriend has a Canon EOS Rebel T7i that she rarely uses but often attempts to bring it places and wants to get more into photography. We also just got a dog and she's already been taking a lot more photos just for him. So my question is, what kinds of accessories or software or classes would be good to help her get more into it for her birthday?

She only has one lens I believe: 18-55mm.

One that I know I'm going to get is a case - we love hiking but she never brings it hiking because she doesn't have a case for it. Any recommendations?

I realize classes might be hard right now due to Covid.

Budget: ~$200
