Book on a Farm?

My 2and grade teacher read this chapter book to us in 1990 - suspect it was a but older. It was a couple who lived on a farm. They talked to the animals, but I dont think the animals talked.

At one point, they visited the Grand Canyon. The guy had to ride a hig Mike because he was a heavier guy.

I dont remember much else at all.
