Setting up a Unusual home network.

So i had a unifi setup for a few years, but i was thinking of redoing it now that i am installing the UDM pro.

So the network consist of a main house and 2 rented out apartments. And i want to separate the networks as much as possible.

Should i set up a seperate vlan for all 3 spots and do each with each own wifi ?

What's the best practises when it comes to segregating 3 households like this.
