Based on my experience, I have found it cheapest to fly into and out of London. From there, you should be able to get fairly inexpensive flights to Dublin or Edinburgh, though I'd recommend taking the train between London and Edinburgh.
I think the overnight dinner experience and sleeper car train has been a popular idea with the SO and her dad who will be joining.
Yes! We did the sleeper train from Glasgow to London last December, and we really enjoyed it. Just be prepared for bunk beds. 😊
No, don't do round trip flights. Fly there/back from Dublin or London, and then grab one way tickets to/from Edinburgh in the middle.
Dublin and London are common US destinations so you'll be able to find decently priced tickets in and out.
flights from London to Dublin and vice versa are around 5€
Not sure on this one, but I think it's cheaper to take the train from Edinburgh to London or vice versa. If not, I think the only benefit from it is that you're getting off right in the heart of the city, as both Edinburgh and London Airports are a decent way out of the city...
This. If you’re staying in London, it’ll be easier to leave while the train from a station downtown vs. traveling back to Heathrow. Plus, it’ll add some nice variety to the trip.
Aer Lingus is pretty good about letting you go into one airport and out of another without raising the price. Check their web site.
Thank you. This is the feedback I was hoping to get.

In my experience it’s always more to fly into one city and depart another. They kinda have you by the balls. With regards to London easy jet and Ryan air are easy and cheap to use. And lots of flight to Dublin. Of course this is pre-Covid. Now I am not sure but I’m told Gatwick is almost totally shut down. Doing the double back sucks. But it usually will be cheaper. All depends on what you want/ can spend.

I don't necessarily think it is, which is why OP should just check and see.
This is what I was trying to get a feel for. Is there likely to be a small enough price difference (say less than $200USD per person) that makes it not worth worrying about doubling back.
Logistically, it obviously makes sense to fly into one city and return from another so you don't double back. What's the reason against doing that?
If you're curious about price... Just price it out. I'd be surprised if the difference is substantial.
I wasn't sure if there would be a large price difference between round trip from same city vs multi city trip.
So price them out and see if there is?
Clearly. But this is so far out given covid that prices don't really look that different. Hence I was trying to get a feel for what others have found in their experience.
If this is so far out, you're not even ready to book flights, you can wait until it is reasonable to book flights, then compare, book, and arrange your trip accordingly.
