If you want to play prot but also arena on the side, would you go for sword or mace?

The sword is pretty solid for tanking with hit, but to be honest the slow attack speed for tanking really isn't that bad, especially if you're horde (windfury). If you were an Orc, would you go axes for the extra expertise (tanking with the 1H axe, using 2H axe in pvp) be worth it? I'd assume no but it's very hard to tell.

For Arenas, you'd definitely go for Mace. The sword is nice for tanking but you have other options like Sun Eater, and the King's Defender from Karazhan is very nice. You do not have comparable options to Stunherald though, so if you're serious about PvP it's very important that you have that. I would not recommend Axesmith unfortunately, since Macesmithing would be better even for Orcs just due to how strong Drakefist Hammer (1 handed mace) is.

Gotcha. I have a feeling Dragonmaw might become a really solid tanking weapon seeing how in Classic the meta has evolved to having tanks reach higher damage outputs. I understand mechanics in TBC are different but I wouldn't be surprised to see items like The Sun Eater, gemming full stamina, etc to go away entirely for more damage.
