Looking for 1st or 3rd person, slow-paced, chill, open-world game with good character progression
Fallout 4 is an all-time favorite for me: I like the mostly slow-paced and chill approach, the open world with so many stories to be found all round, and the (inital) character progression (on hard mode). And I like good or at least quite good graphics. Another favorite game series for me is Deus Ex, played them all. Metro series was ok for me, but I didn't like the mostly linear approach. I liked STALKER, but the series has not aged too well in my eyes. I am a big fan of Red Dead Redemption 2 and sank many hours into it, although it has not really a progression. Oh, and I was blown away by Horizon Zero Dawn.
So I am looking for a similiar game.
I do NOT like too easy games or mindless open-worlds (like how I see the Assassins Creed series, tried at least 1, 2, and Origins, liked none). I never could get into FO3 or FONV, tried it so many times, but I can't stand the bad graphics and gun handling (no offense for fans I hope). FO76 is just so different, so no option for me either. I tried Ghost Recon Wildlands and Breakpoint, but, again, it's just too repetitive (I guess all Ubisoft games I found are just mindless boring for me). Watch Dogs 1 was ok, can't stand the humor of WD2, just drives me away. Please no Japan-style games, big eyes and small child patterns are nothing for me.
Please no games which are (too) fast-paced, I want to enjoy the game in my speed and my way.
Happy for recommendations!
Edit: I adored Witcher 3 (and part 2 and part 1) although the combat system was too simple for me. I do not like Cyberpunk 2077 so far, it somehow seems to have no soul in my eyes.
Edit 2: Somehow I forgot Subnautica which is just one of my all-time highlights as well.
