r/vegan, help me out! office potluck dinner on tuesday, what can I bring?

I want to bring two dishes. The first thing I'm bringing is a tomato and chickpea salad. I don't know what else to bring. There are people are already bringing a bunch of potato dishes. There aren't any stoves at my office, just microwaves and toaster ovens, just to give you an idea of what I could use there (although bring something prepared would be ideal). Any ideas? The pot luck is on the 6th. Help me out!!
