I Need Help Deciding a Midwest Route

Hello! For my school's winter break (dec 5-Jan 6) I want to do a bike tour. I did my first tour this summer, and I can't stop thinking about getting on my bike.

I want to do a tour in the southwest. I have been looking at a tour between Zion National park and Bryce canyon in Utah, but I was wondering if there would be something better that you all know about.

I want to camp every night, so please put that into your considerations (I wouldn't mind stealth camping).

Also, I want to do at least a week's worth of riding.

If any of you have done some southwest touring, I would love to hear what routes you did.
