Anime suggestion for someone looking to get back into it

I hope someone can help me out. I used to really enjoy anime but I feel like I've watched everything I know that is good, and I'm not interested in starting a random series and run the risk of getting turned off by a lackluster show. I hope you get a sense of what I like by reading below.

I thoroughly enjoyed the complexity and characters of Evangelion, and would have to say that is my favorite anime, although mechs aren't typically my thing. I enjoyed the intelligence and plot turns of Death Note, but I also like simple, silly comedies like Ouran Host Club. I've like really good series like Bebop, Champloo, and FLCL. I've seen every episode of One Piece, but I don't think I want to get into a series that long ever again. Excel Saga, Samurai Seven, Golden Boy, Full Metal Alchemist, were all good, and I've seen and loved every Studio Ghibli Film. Any advice is greatly appreciated.
