Many of the options in Ocelot are now removed or overly simplified. How can I fix this?

Many of the options in the previous version of Ubuntu have been removed. It seems that the goal was simplifying it to absurd levels, some which actually restrict overall functionality. Is there any way to get these options, or will I have to switch back?
