Can't find accurate program for stress testing OC

As the title suggests, the stable limits of what I can run in the generally popular stress testing programs (Superposition, Afterburner, Unigine Heaven, Furmark) never reflects my actual in game limits. I can run those programs for hours just fine but crash within 30 seconds of loading a real game. It's making it difficult to fine tune things on my end. I'm running a 5600x with a 3080 for reference. Does anyone else have any alternative programs or have ran into similar issues before?
