Multiple Pipelines for one Repo

Can we have multiple pipelines for one repo like one pipeline for Test environment and other pipeline for Production? Like two different Yaml files for different environments. Or what is the best strategy to deal with multiple environment deployments when prod will only be deployed after it is tagged and some different stages prior to deployment compared to Test environment stages?
