What Octane do you use on your fuel?

I've been reading a lot that the recommended amount‚ at least for the model I'm looking at‚ is 91 Octane. Is this purely to maximize performance / mpg or can I use a lower grade of gas and not experience any catastrophic issues (knock‚ damage‚ etc.).
