Quit or stick it out?

I (32,F,Europe) recently completed a master’s degree and got a job related to the field immediately after. I am grateful for that, since I have a long string of bs jobs before this. I’ve been at the job for a couple of weeks and I already hate it. I’ve had internships in this field and loved those. It’s just the specific tasks at this job are extremely boring and it’s in a specific niche within the field that I don’t have any interest in pursuing further. I am still in my probation period, so I’m really tempted to quit and find a call center job or something that holds me over until I find a job that is a better fit. Applying for other jobs while working this one is extremely difficult, since they expect me to be in office for 40 hrs a week. I’m still new and can’t ask for a bunch of time off to go to a bunch of interviews. Should I just quit? I feel like if i stick to this job for 6 months to a year, I will be pigeonholed to the niche I don’t want to be in when applying for different jobs my wider field. Any help appreciated.
