Accruing infamy after winning a great war isn't the worst thing. The losing side has no army for several years and the winners likely aren't much better

R5: I'm pretty new to this game. I played as Spain and annexed Tunisia and Morroco after that France (my ally and France protected me), Prussia (my ally too), UK and US declared war on me. Is there any chance of not getting sent back to the medieval age?

to expand on several other comments already posted, when you go above 25 infamy other countries get the "contaiment" casus belli on you for free, and they tend to use it.

When your claim fabrications get discovered or you press for territories you have no claims on, you get infamy. If above 25 Great Power will wage a "war of containment" to force you to cut your size. With your numbers there, everyone will probably invade you.
You are safe from infamy if your army is double the size of the two next powers put together, or something like that.
When you are above 20 infamy it's statistically not safe to fabricate claims. When you are at10 is safer. You usually get discovered half way in. If you are uncivilized your claims will be discovered immediately, so you should consider that before.
Check the wiki for ways of lowering infamy. Infamy is a way to keep Victoria from being a free buffet of world conquests; the fun here is in industrializing, colonizing and forcing your will on nations.

If your infamy (number next to the red flag displayed in the Politics section of the HUD at the top of the screen) exceeds 25, everyone gets a Cut Down to Size Casus Belli on you. If the AI feels that it can take you (and you're not already truced out), they'll immediately declare war with this CB. Of course, if your country is strong enough (such as a fully-formed Greater Germany), the AI won't feel like they can take you, so you can just keep going and going.
