Enemy specific tactics

So I've beaten mom's heart 3 times, using Isaac, Magdalene and Cain. I'm trying to beat her with Judas and Eve and having trouble. I've failed Sheol every time I entered.

I've narrowed my problem down to failing to dodge specific enemy types. In particular the hoppers (jumping guys that shoot upon landing) and eyes are causing me way too much damage.

Are there any tips for fighting these guys or other enemies in general?
