Where should a few soon-to-be college grads go for a last hurrah?

We're trying to plan a short vacation for 4 during late june/early july trip lasting roughly a week. Being college students, I'd guess we'd want to spend no more than ~$1000 each.

I'd prefer a place that isn't incredibly touristy, but is still vibrant in terms of social/nightlife with a "youngish" vibe without becoming a full-blown spring-break frat party. Nature is definitely a plus, but I don't expect us to be roughing it beyond a few hikes and such. I'd definitely be down to try new things and see the local culture; 7 days on a beach doesn't appeal to me all that much.

Any suggestions would be incredibly helpful, as we have no idea where we want to go as of yet. haha.
