First time builder, pc is very loud. Help?

Thanks to this forum I am amazed that I actually built a pc, so thanks to you! I am running an i5 2500 (not overclocked) 1 NVS 295 (I will be adding a 2nd). The pc is runs my business but is pretty loud, I was wondering if I could unhook the top fan in the case and would everything still be fine? It would still have a front 120mm fan and a back fan along with the stock heatsink cooler on the i5? I was told if it got too hot it would just shut down which can't happen in my case because my pc runs an automated trading program which would have potential for massive financial losses if it just shut off.
