[Request] Pollo Ranchero

I am not sure if ranchero is what it is called but basically the dish is a bed of fried rice with sauteed peppers and onions with shrimp and chicken the doused with white cheese...

I get this at a local 'mexican' place...but I cant find it on the interwebz...so I thought someone here could point me in the right direction...
