Best way to encourage my 7 year old niece? Equipment advice?

So my niece and nephew had a family photo shot recently and my niece really got into the camera and was allowed to take a few herself and really enjoyed it.

I know that she doesn't need a terribly expensive camera but does anyone have any suggestions for what may be good for her? Also what's the best way to foster this interest?
