How can we achieve the anhydride of molecules like sulfuric acid though heating?

How can heating H2SO4 cause 2 hydrogens and an oxygen to leave the atom, creating sulfur trioxide? I feel like in order for it to happen there would have to be a separate H2O group on the atom, not just hydrogens and oxygens randomly distributed throughout the atomic structure.
