I think it's going to be more of a Goku (SSJ) vs. Frieza thing; yes our main character is dominating the fight, but the villain still has a few tricks up his sleeve, even though he is obviously losing. If Luffy didn't have to struggle even a little bit post-Awakening against arguably one of the top five fighters in the entire series, Oda would no longer be able to put any kind of ceiling over our boy in the future.
You're forgetting that the fight was already at his peak, with Luffy admitting that it would be his last punch. Kaido has taken an insane amount of damage and can't have much more left in the tank. It won't put Luffy on another scale if he now oneshots him, since that was his intention before CP0 disrupted him anyway.

And that’s what I love about Kaido! Everyone always tells Luffy how annoying and persistent he is, but Kaido will be nothing less than ecstatic that he isn’t dead yet. I actually really want Kaido to have the death that he’s always wanted.
I know it goes against the series, but Luffy killing Kaido could be one of the best moments in manga.
I've never seen such a top tier villain being happy for being defeated and killed, and doing it all with a smile and happiness, it could be a truly iconic death if done properly, and it wouldn't even clash with Luffy's character since he'd be fulfilling Kaido's dream
And then Kaido dies with a smile on his face, revealing that he is actually Kai D. O
I’m all for it! It’s such a major arc, I wouldn’t be surprised if it happens either. Beating an emperor is going to be a massive turning point for Luffy and we all know that when pirates fight, it’s a fight for survival!
It would clash with Luffy's character because he crushes villains dreams rather than fulfill them.
Oda says Luffy doesn't Kill because defeating them, and crushing their ambitions/dreams in the process is enough.
Not that Luffy WANTS to crush their dreams, if Luffy were to kill Kaido, he wouldn't do it out of anger, and wouldn't be an evil act, but a merciful one (with the assumption that Kaido shares his backstory), which doesn't contradict Luffy's character
