Unable to transfer Bitcoin: Coinbase Wallet

I’m unsure how the Bitcoin network works on defi. But for the past week I’ve continually attempted to move my Bitcoin and the fee is always too high, albeit 2 am or 2 pm. It worked for 2300 sats so why wouldn’t it work for more? I don’t understand. Any wisdom?
