A few questions for those who have the game about missions / collectibles

Are the hub missions replayable? For example, will I be able to replay the Negotiations section of Episode I?

Do the hub missions include objectives and collectibles? If so, and if these sections are not replayable, is it a case of 100%-ing each area as you play, or risk missing things forever?

I ask because I’ll initially be playing through TSS with my wife, and I’d ideally like us to be able to go through the story together without worrying about collectibles
