Airport layovers?

I'm flying with my family to Kenya this summer and we have some long layovers. 6 hours in Amsterdam on the way in and an overnight in London on the way home.

For Amsterdam, we land in the morning and leave after lunch. Do we need to stay in the airport for the layover or would we be able to slip out and see a bit of the city?
