Should I get a Resident Evil Game?

I'm currently playing Skyrim, and I've been looking for a new game to play. I'm super into vampires, monsters, and horror movies, and my favorite TV shows are The Walking Dead and American Horror Story. I'm interested in all games in the series, particularly the newest one because of the interesting villains. I'm someone who's more used to open-world RPGs and character customization, but I'm a sucker for good lore, who gets frustrated with extremely difficult games. Should I start the series? If so, where? I'm torn between starting with 8 and starting with the 2 remake from 2019 (which I think is supposed to be what you should start with?) Let me know what you think!
