How do you plan/develop your zoos?

I’m a new player and while I’m greatly loving it, the super intricate level of detail makes it daunting to know even where to start with a new zoo. This isn’t a complaint, it’s one of my favorite things about the game, since those features are there and easy to use I’m just compelled to spend several hours on one habitat, but it feels like if you wanna have a complete zoo with a unified vision you gotta have a huge amount of preparation before you even launch the game. I got a notebook for zoo planning that I’ve been using, but I was wondering how other people approached this.
