Any fancy resorts that you're allowed / recommend visiting their bar, pool, beach, restaurant...on Caulker and Ambergris?

I generally travel cheap, but a travel hack I enjoy is to visit some fancy resorts and use their bar or restaurant, or pay to use their pool if I'm allowed to, which lets me get a taste of some luxury. Are there any spots like this that you would recommend?
