Severe glutening from pho broth - how long to recover?

Question

I was diagnosed in December 2021. I've had a few exposures since then but they were always cross contamination or very small amounts, and most happened in the first 2 months while I was adjusting. 15 days ago I trusted a pho place, shouldn't have trusted them but they told me the broth was gluten free. This was the most severe reaction I've ever had, so I think the entire large pho broth contained gluten. I had horrible symptoms that night and for a few days afterward which I expected, but I'm still having issues 15 days later. I've had to cut out dairy again, stop drinking coffee, eat basic foods like raw fruit and vegetables etc because all foods are causing issues, even just drinking water. I've had lots of nausea, migraines, diahrea, intense loud stomach grumbling and pain in my lower left stomach, and insomnia. The symptoms seem to be worse when I'm tired.

I have a 6 week vacation in Europe next week. My question is, should I be worried that this hasn't resolved after 2 weeks? Should I be seeing a doctor or taking medications now? I have some L-Glutamine SAP and Digestive Enzymes SAP on hand that I've taken a few of, but should I be taking these daily now? These aren't the kind of questions I would expect a walk-in clinic doctor to have answers for.
