I did this for the school PCs, i flash debian live iso into a small USB (i use KDE but there are more DEs) then install it into a large USB (has to be more than 16G) which i carry around with my files, and most importantly I don't had to use windows.

I have tried debian, arch, Kali, ubuntu... Debian work the best for me.

I use MX linux with persistence on a 64G pendrive. You can do it with any distro of your choice just learn how to do persistence on a usb.

Any distro should work. You just need two sticks. One for the installer and one to install on to.

You can simply use Rufus for any Debian based distro to create a persistent Live USB.

Or you can use Porteus, does the same, but is Slackware based.

qubes os will be nice as it is quite secure... perhaps too much but I don't think it matters what os you choose but try one which occupies less space so you have more space for files, you can try debian with some basic packages and lts kernel so it won't break easily

So wouldn’t a server edition of ubuntu or fedora be a great idea to install. It uses like half the packages of a full install.

I have never used them so can't tell, but i think if you have the time, get something minimal and install required packages yourself so you have more space for your files

I just learned of a Fedora Spin called SOAS (Sugar On A Stick). It seems that the UI may be geared toward children, but it is designed to run off a USB stick.

I had an old laptop with a hard drive that went bad circa 2017 or so. I used Porteus on a 4GB USB stick for about a week until I got my new drive. It was more than bearable.
