Easy tomatillo salsa!
This sauce can be used as a dip, a salad dressing, or just about anything really. I went ahead and wrote up a generic recipe, but really you just have to make it a few times until you get it to your tastes. However, this will be a good starting point.
Ingredients
(1) 28oz canned tomatillos - drained
(1) large avocado
(1/2 cup) onion
(1) jalapeno
(3) cloves of garlic
(6 tbsp) sour cream
salt
Optional:
cilantro
lime juice
Combine all ingredients into blender and blend until smooth. Salt to taste and chill. Add lime juice for flavor and it helps act as a preservative.
A few notes:
-If you like your salsa with more texture then you can use a food chopper to chop the ingredients rather than blend. However, I recommend blending the tomatillos or you will have a big mess on your hands if you try it with a food chopper.
-You can use fresh tomatillos in place of canned, but I have not done this myself. You can also use jarred salsa verde instead, but be careful because some of them are already flavored pretty well.
-The jalapeno is hit or miss. Sometimes it's bland or hot as hell, but omiting the seeds will significantly reduce the heat if you aren't a fan. You can always add more sour cream to help reduce the heat if you make it too spicy. I find that 1 jalapeno(seeds included) gives a pretty tame heat, but is noticeable.
This produces a hefty amount of sauce for 1 person, but if you decided to down this in one sitting like a smoothie here is the approximate nutritional information: (thanks to MFP)

I don't have an exact serving size. This packs a lot of flavor so I just use to taste, but I assume the carb count is very small for 3-4 tablespoons.
