Inactivity Prompt Even After Moving
I have the Inactivity Prompt set and it's been happily sending me reminder if I stay idle for 50 minutes. However, this morning it has been sending prompts even after I've moved i.e. moving around doesn't seem to be resetting that 50-minute period. Has anyone had to deal with this before and how did you resolve it?

You're not alone. Earlier this week the inactivity reminder came on AFTER I had run down the stairs down the parking lot to go for a run. Needless to say that I was doing stuff, my heart rate was at about 90-95, so no I was definitely not inactive.
Weirdly enough, today it came on (and rightfully so, since I had been sitting for 50 minutes) but I couldn't get it to go away even after walking up and down my apartment for 3 minutes. Usually it only takes a couple of steps for it to register activity and goes away. I opted for some upward stretches and it registered them at least. But weird that walking didn't count. My step count went up, I checked.
Are you using the Galaxy Watch 4? Your post didn't mention it.
That sounds just like my experience. I, too, found some twists worked but not walking. And yes, it's a Galaxy Watch 4. I was also using the Facer app and wonder if that has something to do with it. I've used a standard Galaxy Watch face for the past few days and it's been OK. I'm going to switch back to a Facer watch face and see if it starts ignoring the walking again.
A thing I'm trying right now is having the auto-detect back on (which I had turned off because I as tracking runs and other activities with the Strava app on the watch for a few days to see if they get better GPS results - this watch has quite a few issues haha) and since then I was inactive long enough once today for it to give me the warning an lo and behold, the warning went away after a few steps and the watch then greeted me with the "good job staying active" message. Gonna keep an eye on it for a while, see if that truly fixed it. I am using one of the default watch faces, though, the "Digital Dashboard" one to be precise.
I just experienced this today while running to work. I was still running when the reminder came up.
