Going out with girlfriend on a picnic. What should I cook as a dessert for her?

Well, a few weeks ago, I asked out a girl during a picnic she and I had. We had a blast together outside in the fresh air and I cooked lunch for her and she made some excellent brownies. So this Wednesday we are having our one month anniversary and redoing a picnic, but this time I'm the one making the dessert.

So i ask you, What should I cook for her as a dessert? It mustn't need refrigeration (since it is usually 100° out here and last time we spent about an hour "eating") and I'm trying not to "bake" anything since I would be competing with what she does best

Edit: i was searching my pantry, and found some sugar cookies. So im making a "tiramisu" by soaking the cookies in coffee and adding a sweet cream mixture I made with philadelphia. Thank you all, I'll definitely use some of this ideas on a later time
