my steak won't cool down

Food Safety

I bought a sirloin at the store earlier today and now I'm trying to cool it down so it cooks more evenly (or that's what I read) but it won't cool. I tried moving it from a cutting board to a pan because I thought the pan would conduct the heat to it better or something but that didn't work either. 3 hours later and still cold. Please help

You're not supposed to cook a cold steak

This is a big myth. As long as it's not frozen it doesn't matter. There have been a bunch of tests done and it honestly makes sense in theory but the fact of the matter is the internal temp of your steak isn't gonna be significantly different unless you leave your steak at room ramp for like 12 fucking hours and that means it's sitting in the danger zone for a long time.

If you think you aren’t supposed to cook a cold steak then why on Earth are you trying to cool it down?

But you said you're trying to cool it down..

Wait what? Are you trying to cool it down or heat it up?

I'm trying to let it get to room temperature before I cook it but it's not happening

It's half a myth. The difference between final temp and cross section between a cold steak and room temp steak are minimal.

Yours is frozen if you left out out for over three hours now.

Just cook it.

Is it too cold or too warm?

Cold

Is it frozen? Or just cool?

My guess is that it prob came to room temp but felt cool to the touch because its a better heat sink than air. Your body is well over room temp but the air is not a great medium to draw heat away. A piece of meat will feel cool to the touch at room temp because you can more easily transfer heat energy to it which you perceive as coolness to the touch

Letting meat come to room temp is a silly myth that needs to freakin' die, this question should be all the evidence anyone needs.

As long as some Michelin star chef blurts out some outdated things, because that’s how he learned it, those myths will never die

Not a single Michelin star chef brings their steaks to room temperature before cooking. You don have time for that sh*t in any commercial kitchen in the world.

Thanks, I know, they have to mass produce them

But for one steak, in a home kitchen, many of them still share many kitchen myths

Yell at it. Take it off the plate, the scream at it while on the plate. Should increase the temp, then you just slap it a lot.

The friction will cook it

You don't want to cool a steak, you want to warm a steak to room temp.
