What episode 3 means to me...
My theory on The Twins.
This is heavily inspired by a lot of other theories that have been around, but I don't think it's been explored much.
The Twins are, in my opinion, the previous favourites of Leslie. They don't appear in the same way as any of the Teachers, they just barge their way in from Outside. I think Leslie used them to play out a "real" family, and they became obsessed once they lost the mother. Is it possible that Leslie took the mother away after David died?
The archetypal mother (who's game piece is an Earth Mother?) doesn't fit in the family anymore. Why not? In my opinion, the Mother was taken away because she no longer fit the role. She'd failed to be Mother. Unfortunately, without the archetypal mother, the family can't cope. They're not being watched anymore, since Leslie is now occupied with the three guys, so they take matters into their own weird little hands.
My theory for The Twins being so preoccupied with "real" family is this: they're Mormons. The Family Unit, the importance of recipe collecting, the links to death, all of these remind me of LDS beliefs or cultural practices. The tree who offers to find Red Guy's family reminds me pretty strongly of LDS genealogy/family tree services, and it would explain why record-keeping is so important to the family.
This is where it gets a little dark. If Leslie is religious/devout, and was representing herself through the original mother, she might have removed the doll/the role because of her actions, rather than those of the character. I've got a bit of confusion in my brain regarding whether or not the mother is Leslie, but I think its possible that ep3 is going to end up in a lot of theories about the house, the guys, and Leslie.

Maybe Leslie is the mother, or they saw her as a mother but she didn’t want to play with them anymore
That could work, especially as we never see a depiction of the mother.
