Rather than look for a stand alone novel, perhaps pick an anime which you enjoyed which is based on a LN series and for which you would like to know the rest of the story (very few anime adaptations cover an entire series from start to finish). Then start with volume 1 in order to pick up the things which the animators invariably omit.

Stand alone as in singular novels?

1)The Dark Maidens 2)The Hero and His Elf Bride Open a Pizza Parlor in Another World

I don't know what genre you want but one thing I can say for sure is that you don't want to start with The Irregular At Magic High. That's what I did and boy, was it a bad idea. Don't get me wrong, it's good but it was hard to read for 14yo me who was still learning English

86 volume 1 can be read as a standalone. If you like it, dont read the epilogue and just keep going. If you find it ok but dont want to read on, read the epilogue.

Other LNs that people rec for single volumes would be [[Three Days of Happiness]] and [[I want to Eat Your Pancreas]]

Wait, I've watched the anime and thinking to read the LN from Vol 1

Why are u saying to skip the epilogue?

It's a flash-forward to a little bit later in the series. I personally didn't skip it and didn't feel spoiled at all (if anything, it made me more interested to read the next volume than I otherwise would have been), but some people are really sensitive about that kind of thing. Seeing as you've watched the anime, there would be absolutely no point in you skipping it.
