old pumpkin seeds

i’ve had pumpkin seeds sitting out in a jar with some paper towel for a few days. some of them have sprouted, i want to roast them but i’m worried because i’m not sure how to tell if they’ve gone bad. i know with garlic if they’ve started sprout it’s gone bad but i’m not sure with pumpkin seeds. googles not helpful. they smell fine and they’ve been out for 7 days. should i roast them? thank you
