Unexpected Death

My mother in law passed on October 19, her death certificate stated myasthenia gravis as the cause of death. My husband is the only child. She had a will, but the copy we have so far is not signed. She has one on a flash drive but I am unsure if it is signed. (Still looking for what box we packed that in) My husband had full power of attorney. He had that done right at her bedside with an attorney before she had to be intubated. Do we still need to go through probate? She had most everything in her account including the income from the sale of her house. She had retirement accounts, most everything had my husband and daughter listed as beneficiaries.

Main concerns: Her insurance lapsed on October 27th. Can we reinsure it in our name? It’s paid off. Can beneficiaries be listed in car titles? She had a life insurance policy. She had kept and paid the premiums for years on time. It lapsed in July. She was cognitively impaired and did not pay the July and August premium. She was hospitalized and no responsive when she was hospitalized in August. Can we fight this? She had never missed a premium. She was never late. She lived alone in another state. Do we have any recourse with this policy?

Thanks for any help or suggestions.
