Question on the sterilization process
I am currently at the step of having rice in jars, and then put into a 12 qt pot, and steamed for 90 minutes. After that im supposed to wait for it to cool down by itself, my question is how long should it take to cool off? Do the jars need to be completely cooled off or can they be a little warm? How long do I have before the jars get contaminated if i wait until tomorrow morning to inject the spores?

If your pot is not a pressure cooker/canner then you will need to adjust your times by a lot. There's lots of debate about sterilization without pressure, so I'll leave that to you, but you'll want to cook your grain, drain and dry it while it's still hot(to get rid of excess moisture), then can it up and subject it to whatever sterilization process you decide on. Once you've done that you can literally wait months to inoculate it. You can basically treat it like any other canned good at that point.
im following phillygoldenteachers broke boy guide so no i dont have a pressure cooker, videos said 90 min and then let cool to room temp
Imo that sounds a little suspect because that's the same time required for sterilization at a much higher temperature. PGT is certainly a respected authority in the community, so I'm interested to find out what the results are.
i will definitely share, the 90 minutes ended at 630, and i injected the spores at around 1030. hope the rice wasnt too warm or i waited too long(only cus i didnt want the rice to be hot)
